The vineyards are grown in accordance with  certified organic agricultural practices: The soils maintained exclusively by light ploughing and fertilised with vegetal compost.

The yields are low, or kept under control by green-harvesting. This intervention, carried out by hand in summer, enables selection not only in terms of quantity, but also quality, by favouring those bunches which are the best exposed.  In order to keep the bunches well aired, the leaves around the grapes are thinned out by hand.

Following a careful maturation, the wines undergo only a light clarification so as to respect the unique terroir characteristics of each wine. 

History

The Domaine was founded by Mathieu Jaume in 1826. Alain Jaume now runs the Domaine with the help of his two sons Sébastien and Christophe. The estate is located in the commune of Orange and consists of 75 hectares. It covers four different appellations: Châteauneuf-du-Pape, Côtes-du-Rhône Villages, Côtes-du-Rhône and Lirac. As of 2012 the estate is certified organic.
